1. Japchae
1. Add glass noodles into boiling water and cook until they float, set aside.
2. Prepare the pan over medium heat, make omelette (half-cooked) over low heat. Cut lengthwise after cold, set aside.
3. Reheat the pan with little oil over medium heat, add garlic, saute until fragrant. Add onion, carrots, red and green bell pepper and shitake, stir well.
4. Add glass noodles and all sauce ingredients (soy sauce, sesame oil, sugar, salt, white pepper and sweet soy sauce), stir well.
5. Sprinkle with sesame seeds before served.
2. Pajeon
1. Mix flour, water, and salt, stir well.
2. Add all vegetables, stir well.
3. Heat a non-stick pan with little oil over medium heat. Pour a spoonful of (vegetable) mixture) until covering pan surface.
4. While half cooked, pour (beaten) eggs, amidst the mixture, turning slowly.
5. Ensure mixture remains thin and cooked evenly.
6. Cook all mixture. Served while warm with dipping sauce.
3. Miyeok Guk
1. Soak clams in mixture of water and salt, set aside overnight. In the morning before cooking, rinse thoroughly.
2. Soak dried seaweed for 5 minutes, cut about 5 cm.
3. Chop garlic and ginger finely. Heat a non-sticky pan over medium heat. Add seaweed, garlic, and ginger. Add sesame oil and soy sauce. After sizzling, add 2 cups of water.
4. After boiling, add clams, salt to taste, stir well until it bubbling.
5. Served while warm with a plate or bowl white rice.
